Today, Lucy is over her ear infection, Isaac is taking medicine for his ear infection, and I am still sick but getting better. That wierd, fevery, achy, buzzy-head, hurts all over feeling is going away. As they say, it's all over but the nose-blowing...or is it the shouting? Please, no shouting!
We've decided at the spur of the moment to take a weekend trip to St. Louis. I get to see Sylvie yeah! Sylvie and I are going to have breakfast on Monday morning, and then we're spending the day at Six Flags. We're going to swim in the hotel pool and have a good time as a family. Plus, one other thing...I will post photos when we get back!
Last night I tried a new "John-safe" recipe. It is a taco casserole from Erin. She is always so good about looking out for things that are safe for John and passing them on. This is one that everybody can enjoy, so here it is:
1 lb. ground turkey
1 onion chopped
Cook together until turkey is browned, then add:
1 can diced tomatoes
1 package taco seasoning
(may add chile peppers or more hotness if you like, I don't need any extra hotness HA!)
spread this in a 9 x 13 pan
top with:
one can drained black beans
1 small bag frozen corn
1/2 bag plain hash browns or tater tots
top with as much cheese as you like
bake at 350 degrees until cheese is brown
Easy but complete! Add a fruit salad and you've got all your major food groups. John is always hesitant to try new things, but I think he liked this.
