John - safe fall snack

The kids had an early dismissal today and we are making this fun snack. It is supposed to have candy corn in it. Whomever can find candy corn free of egg whites, you will have my unending love and eternal gratitude.

Fall Snack Mix
3 quarts popped popcorn
4 cups Cheerios (I use Barbara's Organic Breakfast O's)
4 cups corn or rice Chex
2 cups salted peanuts (obviously I leave this out)
1 cup packed brown sugar
3/4 cup light corn syrup
1/4 cup butter, cubed (I use solid palm oil shortening)
2 teaspoons vanilla extract
1/2 teaspoon baking soda
1 bag candy corn

In a large greased roasting pan, combine popcorn, cereals and peanuts (if using peanuts).
In a large saucepan, combine brown sugar, corn syrup and butter; bring to a rolling boil and boil for 6 minutes, stirring occasionally. Remove from heat and quickly add vanilla and baking soda. Stir until mixture is light and foamy.
Pour over popcorn mixture and toss to coat. Bake uncovered at 250 degrees for 1 hour, stirring every 15 minutes. Add candy corn and cool completely before eating. Enjoy! Great for school lunches!
